These cookies are a huge hit with my family during the holiday season. With whole wheat flour and ground almonds, not only are they a healthy alternatives to other desserts this time of year, but they make a wonderful gift! The dough is simple to prepare and allows you to easily gift it frozen and pre-rolled with baking directions to friends, family and co-workers. Or if you prefer, you can bake them yourself in as little as 10 minutes and have plenty to share. This recipe makes 48 cookies.
Spice Cookies
Ingredients
2 cups unsalted ground almonds
2 cups whole wheat flour
1 teaspoon baking powder
2 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon ground all spice
1/4 teaspoon sea salt
1 1/2 cup sugar
1/2 cup olive oil
1 egg
1 egg white
1 tablespoon orange zest
1 teaspoon vanilla extract
