Frittata, the Breakfast Cure-All

Eden Hertzog is now a mom…and still hungry

Let’s be honest; of all meals in the day, breakfast can get a little boring. Maybe this is because breakfast is a symbol of our will to start each day “right.” In any case, I have been getting bored of my go-tos.

We had company over this morning, and it was the first meal I was designated to cook post-baby. It still had to be quick and easy, but I’m not one to cook for others and not hope to dazzle just a little bit.

Enter the frittata. It’s different, appears to be special and somewhat labourious, is delicious, nutritious, but, best of all, can be made in a cast-iron pan. That just makes me feel kind of hardcore, which is how I feel these days anyway (um, motherhood is the most hardcore thing ever, by the way).

Break Out of Your Box, Eat a Pancake

I simply do not understand people who don’t eat breakfast. How do they function? Survive? Feel normal? For the most part, I eat the same thing every morning: granola with berries and almond milk, or oatmeal with berries and almond milk. Then I go around the corner for a cappuccino. And ahhh, the day can begin. It sounds completely boring, doesn’t it? Maybe it is, or maybe it’s this one thing I can count on to be the same.

But then, every once in a while, usually on a weekend, I wake up (maybe a little later than normal) and the husband is fast asleep next to me, and we have nowhere to run off to. I say to him, “Do you feel like pancakes today?” He, of course, says yes, and away I go down the stairs in my pyjamas. I pull out my Joy of Cooking and open it up to the page where the lovely little red ribbon sits: Griddlecakes.
