Spice up dinner with these Cinco de Mayo flavours

Mexican is probably the most kid-friendly cuisine out there, being tasty and fun to make — who can resist a taco bar and spicy chocolate? Beans, avocados and tons of veggie toppings make for an energy packed, hearty meal. To do Cinco de Mayo right, ditch the margarita pre-mix and whip up some of these more authentic, fresh dishes. THE BEVERAGE: Aguas Fresca

- 2 cups watermelon
- 2 tbsp sugar
- Juice of half a lime

Cinco de Mayo celebrates the victory of the Mexican army over the French in 1862. What was once a regional celebration in Mexico has evolved into a much more widely known and celebrated event in the US and Canada. For many, its simply an excuse to indulge in excessive consumption of margaritas and nachos.
On that note, allow us to share with you some great ideas on how to celebrate this event with your family.
Virgin Margaritas
You’ll need:
- 2 tablespoons kosher (coarse) salt
- 1/2 lime, cut into 4 wedges
- 1 can (6 ounce size) frozen limeade concentrate, thawed
- 1/4 cup orange juice
- 4 cups ice cubes
Method:
Rub rim of glasses with lime and dip in salt. Blend all ingredients until smooth. Pour into glasses, garnish with a lime wedge and serve!

What we’re reading today:

1. Parenting is so stressful these days. If you’re not getting your kids into the best pre-school class, you’re basically setting them up for failure their whole lives. One New York City mom is suing her daughter’s preschool because her daughter was lumped in with younger kids and the mother figured that was ruining her chances at an Ivy League education. And here we thought Glenn Beck saying the earthquake in Japan was a message from God was going to be the craziest thing we read this morning.
2. OK, maybe there is a lot of stress and anxiety in parenting. Parents in Los Angeles (and presumably elsewhere) are worried about competition, they’re hovering and they’re “just scared.” One pediatrician says, “Scared they’re going to do the wrong thing, not do enough, they’re going to miss the boat.
