As I’ve grown older I’ve come to associate Easter with more than just chocolate and brightly coloured eggs. I also remember family dinners with ham and the perfect side dish, scalloped potatoes. This rich, creamy side was for special occasions only in my house. I loved them. Still do. Here is my best recipe for scalloped potatoes – one that is easy to get kids involved with.
If your kids are too young to peel or cut potatoes they can still have a great time helping you to layer them. Feel free to make a counting game out it by asking you kids to first group the potato
slices into group of 5 (or whatever number you choose). This will keep them engaged and busy while you prepare the sauce. Or take this time to talk about potatoes themselves, where they come from, how they grow and what other vegetables come from the ground. The first few thoughts that come to mind when you think St. Patrick’s day are green, beer and leprechauns. Well, your kids might not be old enough for beer, but what’s to stop them from enjoying a festive green drink?!
These pistachio ‘leprechaun’ milkshakes are great to make as a family. Letting your kids measure out the milk, count the scoops of ice cream and share their creation with the family helps practice kindness, math and motor skills with tasty results.
Ingredients
- 4 cups milk
- 1 package of instant pistachio pudding mix
- 4 scoops of vanilla ice cream or frozen yogurt
- Optional few drops of green food colouring for an added punch of colour

When I was growing up, breakfast Christmas morning was as big a part of the day as opening the gifts Santa had left. To this day I still remember those times fondly – sitting around the breakfast table, no rushing, Christmas music playing in the background, everyone in PJs, and of course…the pancakes. Light, fluffy and delicious, with a syrup sweetness that made them feel like a real treat.
These little babies are easy to whip up and can be made healthy by using whole wheat flour and throwing in a cup of your favourite berries (frozen work great, just make sure they are thawed).
And for those feeling adventurous, try pouring your pancake batter into metal cookie cutters you have placed on the hot pan. Let them sit for 5 – 10 seconds, then pull them off. It will leave a slightly darker design on one side of your pancake! Read more...
