How to Eat and Get S**t Done

Cookie mogul Eden Hertzog shares recipes she enjoys with her family

Excuse the French, but since I had a baby I’ve become more ruthless. Speaking of the baby, I think he is now a toddler, and after many months of being ruled by an insane nap schedule, I decided to switch him to one long afternoon nap. This is a game-changer. The mornings are now wide open to actually go and do some fun things, and then he sleeps from 1pm-4pm. That’s right – 3 hours!!! Three glorious hours to find my attention span (which is extending from two minutes to five minutes) and accomplish some work or self-care.

When I come down the stairs from his room I feel like a stopwatch has started ticking: OKAY, GO! And I spring into action mode. This next paragraph will be somewhat revealing of my true nature, which may look a bit crazy, BUT it includes a cool recipe so there you go.

1:00: Put 2 cups of water onto boil. Add a pinch of salt and 1 cup of quinoa. Cover. Set timer for 10 minutes.
1:05-1:15: Get in shower. Scrub body. Sigh. Wash hair even.1:15: Turn shower off and feel very proud that JUST as you turned the tap off the oven timer went off. Wow, you feel amazing about yourself and totally in synch.
1:15: Turn stove off but leave quinoa to steam in its pot (with lid on) for 12 minutes. Go ahead and set that timer again – you know you want to. Now go and put some moisturizer on your face, pluck an
eyebrow hair and put your clothes on.
1:25: Wash a generous handful of spinach. Put some butter in a frying pan on medium-high heat. Saute the spinach. Pull out a bowl and fill it with your now-ready quinoa, and put the spinach on top. In your frying pan, crack two eggs. Cook ‘em over easy. Put them on top of your little quinoa and spinach stack and then grate some parmesan cheese on top. (I know this sounds incredibly basic, but people – I am here to help you eat, not win a chef competition.)
1:35: Eat. Just sit and eat and chew and delight in the fact that it is only 1:35 and you’ve showered and are about to eat, and there are still 2+ hours of toddler sleepdom to go. Sigh again. Now go and
do something for yourself. Not f**kbook, or online shopping or Youtube or anything, but something productive that may actually get some good peptides flowing.
