Jodi Lariviere shares seasonal recipes that are as healthy as they are yummy

Salad can seem like a foreign concept when the snow is flying in the winter, but after a holiday filled with tasty, but not always good for you foods, it can be just what the doctor ordered to get you back on the track to eating right and keeping those new years resolutions!

And if one of those resolutions is to start cooking more from scratch then you are going to love this recipe! This salad uses beets, a naturally sweet and seasonal vegetable that will have you and the whole family thinking of eating salad the whole year round. It also uses a very simple home made dressing that is great as a marinade, dipping sauce for veggies or on other salads.

Raw Beet and Pear Salad

Dressing:
Juice 1 large lemon
5 tablespoons olive oil
Salt and pepper to taste

Salad:
4 large beets peeled and cut into match sticks
3 pears cut into match sticks (still slightly firm)
200 grams goat or feta cheese crumbled
Handful of mint leaves

Combine all salad ingredients in a large bowl. Mix dressing ingredients in a separate bowl, stir to combine then pour over salad. Toss and serve immediately.
